1 frozen banana, peeled
1 cup frozen pineapple chunks
1/4 cup milk - your choice: dairy, unsweetened coconut, or unsweetened almond
1/4 cup dried unsweetened coconut
Use the same preparation method as the plain ice cream found here, placing bananas and pineapple in the blender to start, slowly adding the milk - coconut milk is best for this one if you have it, for an extra little coconut oomph. Once a creamy consistency is reached, add in the dried coconut for a few quick pulses to blend in.
I haven't tried this one with rum yet to get the truly authentic pina colada experience - let me know if you give it a go and how it works out for you and I'll update the recipe. I suppose that might negate the healthy aspect of it? #sometimesyoujustneedrum
