Last week I thought I'd stumbled across the greatest discovery the world had ever seen when I accidentally made this the first time, and then proceeded to experiment with various versions and flavours almost every day for a week. After deciding I was going to market the product and make millions doing so, I did a quick google search. Turns out, this "amazing discovery" by me, has been around for a while. Oh well. I'm still in love with it.

I have a sweet tooth, and I love ice cream. Problem is, anytime I eat ice cream I pay for it afterwards in stomach pain. Also, as someone who enjoys ice cream as much as I do in summer, and particularly when on vacation in BC, I did a little math on the typical ice cream store trip and uh, let's just say it doesn't leave a whole lot of wiggle room the rest of the week if you're making multiple ice cream stops.

This "ice-cream" totally surprised me in so many ways: it's incredibly creamy, super sweet with zero added sugars (and I really mean none - no honey, no refined sugar, no sweetened condensed milk, no stevia, etc, etc), and it's versatile enough there really are endless flavour combinations.

Enough chatting already, let's get to it!! For today, here it is in it's simplest form.

2-Ingredient Ice Cream

Serves 4

2 frozen bananas, peeled, cut into 1 inch pieces
1/4 cup milk - your choice: dairy, coconut, or almond

Place banana in a high power blender on low speed until crumbly and mostly chopped up - a Vitamix works wonders, though I'm sure a food processor would do the trick as well. Add in half the milk, and continue blending - you may need to scrape the sides down a bit. Increase speed to medium-low, and add the remaining milk. Once you've reached a creamy consistency there's no need to add any more milk - play around with the quantity to find what works best for you. It'll be the consistency of soft-serve ice cream, so if you prefer it a little harder place it in the freezer for 30 minutes to an hour in an airtight container and serve from there.

Tip: When I have a bundle of over-ripe bananas I'll peel them first, cut them into 1 inch pieces, then toss them in the freezer. That way if you want a quick fix of banana for a smoothie or for ice cream, there's no wait time.

I've also tried it with a Magic Bullet blender, and it does work - though you may need your banana pieces a little smaller, or a bit of extra milk to ensure the consistency is something the blender can handle.

Best part is it's healthy enough for you that you can have it every day. Not going to lie, my week in BC involved this every single day, twice on the last day:D
