I am a big fan of making my own sauces to get away from both the incredible amounts of sugar dumped into store-bought, as well as the list of "what's that?" ingredients. Tonight's meat was pork chops and since they tend to be a little plain on their own I decided to throw some stuff together and hope it worked. Sometimes you win, sometimes you lose - tonight I think was a win! I'm going to guess this would also work well on chicken before throwing it on the BBQ.
Grilled Pork Chops Marinade
Makes enough marinade for 3 x 4 oz pork chops, adjust as needed
1 1/2 TB soy sauce
1 1/2 TB honey
1 garlic clove minced or 1/4 tsp garlic powder (salt free)
1/4 tsp ground ginger
1/4 tsp onion powder
1/4 tsp ground cinnamon
1/8 tsp cayenne pepper
3 x 4 oz boneless pork chops
Whisk together all ingredients, and coat both sides of the pork chops in the marinade. Cover and refrigerate for about an hour (let's be honest - does anyone actually leave their marinade over night? Who's got time for that!). Grill on high heat on the BBQ, approximately 4 minutes per side - your cooking time will depend on how thick your chops are, but ensure they're cooked fully (unlike a good old rare steak, mmmm).
And now for my quick note on soy sauce: I purposely left out "low sodium" soy sauce because here's the thing - "low sodium" just means there's less sodium in that bottle that the regular bottle from THAT particular brand. Label check when you're in the store and compare across brands - the soy sauce I buy is "regular" and has HALF the sodium of the "low sodium" version of another brand. Sneaky, eh? I'll leave my food label marketing rant for another day;)
